First, you need to have patience for the perfect doughnuts. The right dough cannot be rushed to rise faster, or the kneading of the dough done more hastily. Patience in both the preparation of the ingredients, creating the right texture for the dough, and the methods for cutting out your dough can lead to the difference between a fluffy doughnut and a dense final product.
Second, you need to have your oil correct and at the right temperature. This is not the time for guesstimating! Using a thermometer that is meant to sit inside a pot, keep your temperature at around 360 degrees Fahrenheit for ideal frying. You will also want to make sure you choose an oil with a higher smoke point to avoid it tasting rancid.
Finally, you’ll want to work quickly. This is where many doughnut makers get caught up because they are not practiced with the process. Do as much of the cutting and preparation before you start frying so you can work fast. Have the glazes or sugars ready along with paper towels or trays.
